Can anyone please point me to the default settings for the thumbnail and thumbnails section of the 'admin settings'.

Sorry, I am not 100% sure what you are asking for here ... You will find gallery thumbnail settings in admin -> settings -> thumbnails. You will also find a few settings under admin -> themes -> edit your theme -> thumbnails

It's OK. I installed a clean copy of imagevue locally and can check the default settings there.
