When users go through my galleries, they can see the actual file structure of how the files are on the server, where many of them I have renamed in the admin control panel. I don't want them to be able to see the whole path plus the filename.jpg when their looking at images.

How can I disable that?

You can disable that by going to admin -> settings -> settings.useswfaddress - Uncheck that item and save.

This will not show anything in the URL, but keep in mind it will also prevent you from deep linking and using previous/next browser history navigation buttons.
