i saw a gallery with complet expand menu inclusive subfolders, but i don ´t find the option to activate it.
how does it work?

Do you have a link to this gallery? I don't see how it is possible to expand the entire menu from start. It could be the gallery you saw is using html-indent and formatting to create an effect of an expanded gallery. I have seen that before...
