I can't find why my menu isn't showing all the folders. In html mode, all the folders are shown but in flash not.
When I tweak defaultSortFolders, it is changing the folders in the menu, but none of the option show all the folders !

Nah, those are national chars breaking up XML:

Rule of the thumb is to keep filenames in plain latin chars and you can write whatever you want in title. But gotta say sometimes it works if filesystem is in UTF8, thought this is clearly not your case.
There is a tricky part with UTF-8 and filenames, maybe we'll add some workarounds later, but even then recommendation is to name folders and files using basic latin.
