Is it possible to set multiple versions of Menu items for different languages? For example: in ?language=english my items(categories) under "Gallery Menu" would be 'Sports' but under ?language=spanish it would display as 'deportes'
I've read https://www.photo.gallery/documentation/languages/ but failed to find what i was looking for, did i miss something?

Not quite sure what you mean by "different versions". You can use languages to change the title of any folder ... The link will still go to the same folder though, but when it is accessed, all the content can have separate languages also.

What i mean is , i cannot set a folder name as [english]This is a title[/english][spanish]Este es un título[/spanish] because it says it accepts only english alphabets from a-z and number and no special characters.
What i wanted to do was when an english visitor views my site the items are displayed in english (the picture folders under Gallery menu) and when a spanish visitor changes the language all the folder names are shown in spanish under the Menu.

You need to set folder title, not rename the file itself:
