Hello Karl!
Coincidentally, I have noticed that it does not or does not always display correct values in the "last change" column in https://www.thomas-ruf.ch/sitemap/. For example, I have completely revised the page www.thomas-ruf.ch/angebot/pilzkalender-2022 (gallery and content). Nevertheless, the date "Last change" is not updated. 

What could be the reason for this?

I don't know what you see in the sitemap, but for "last change" it says 2021-07-06 15:58, which is just a few days ago. Surely that is correct? This also matches the meta tag in the page itself:

( 1625579934  = 2021-07-06 15:58 )

This is the problem. This was the date I first created this page. But I expanded and changed it a lot on 2021-07-10. So a popup gallery with the calendar images was added and a lot more text was added. But the date in the sitemap stayed on the date of the first creation.

Maybe you didn't update the page date manually. In vanilla X3 if you want to change the page date you have to do it in page-> settings-> date. If you edit a page that already has a date, and click save, there is no automatic update of that date.

X3 will automatically update the page's "updated time" when you add or remove images (folder content). It won't change the updated time if you only modify a setting (for instance title or custom html content). You can also assign the date manually from Page > Settings > Date.
