2) is there a feature (planned) that automatically displays the last x number of uploaded images? Kind of a "New Images" Section?

You mean display a link somewhere on your start page, which always points to the most recently uploaded gallery?

Unfortunately, this feature is out of scope and "unlikely" at the moment. Even if we could add a feature in the panel to "tag" images as "featured", then we have to create an "synthetic" page that scans all your folders for features images, and artificially create the page. You can manage a single page that contains a "selection" of your latest images, but you would need to define manually what folder you want it to get images from.

Also, you could easily create a link that redirects to your latest gallery, as explained in the links section under redirects - > dynamic pages:
